Raw chocolate chip cookies (cashew's)

My sister send this recipe via facebook. I love it so much. It takes no time at all and gives you one more way to eat nuts.


• Ingredients:
Cookie dough:
o 1 3/4 cups ground raw cashews
o 3/4 cup ground raw oats
o 1/4 cup Agave Nectar
o 2 teaspoon vanilla extract
o 1/4 cup coconut oil
Raw chocolate chips:
o 2 Tablespoon coconut oil
o 1/2 cup carob powder
o 1/2 cup cocoa powder
o 4 T agave nectar
o 2 teaspoon vanilla
Directions:
Dough: Grind up raw cashews and raw oats in a food processor or blender. Place all cookie dough ingredients into a large bowl and mix by hand or with a spoon. OR simply place all ingredients in the processor and blend (why didn’t I do this!? lol). Mix until a dough forms and you can make a large ball. Refrigerate dough while you make the chocolate chips.
Chips: Mix all chocolate chip ingredients together in a medium sized bowl. Roll the dough out onto parchment paper and place in the freezer for about 30 minutes. Optional: Half way through at 15 mins., flip the chocolate sheet over for even freezing.
When chocolate is frozen, cut into chips. This is the fun part! I used a pastry slicer and it was SO fun making the chips.
Mix chips into dough and have fun!
Place in fridge (if you have any left that is) to harden for about 30 mins. They get real hard! Make sure to refrigerate them on parchment paper or they will stick to the plate.
Notes: If you don’t have carob powder you can substitute it for cocoa powder just as easily. Alternatively, you may be able to sub the agave nectar for maple syrup or honey. If you try this and it turns out let me know!

    Can I put in a request for everyone? Since we've all read/are reading ETL if you have any good salad dressing recipes that fit the plan, please share. I noticed his had some funky ingredients that I don't think I'll be able to find here, or I don't know what they are.

    And where in the grocery store does one find nutritional yeast, and just what exactly is it? I was supposed to use it in a recipe tonight, but couldn't find it at the store...so it's getting left out.

  4. Very nice explanation of Nutritional Yeast. I have used it a few times and really like it. I know a lot of nursing mom's like to eat it to fortify their milk with B vitamins. Hmmm.

    Em- I am THRILLED about this little recipe you just gave us all. Am I allowed to have it in the 6 week cleanse? It didn't say much about sweeteners. I know it's not a raw veggie- but it's not a refined sugar- soooo... what do you think? Is this cheating or no? I don't know if I can wait 6 weeks to try it!

    pps- nutritional yeast can ONLY be found at places like Sunflower Market. I have never seen it at ANY normal grocery stores.

  6. I actually use coaconut milk not the oil. However, the oil is very healthy for you. I will blog about that another time.

    I personally don't think it is cheating. This can count as a nut serving. It is up to you if it is "cheating" or not. I think recipes like this and others I will post help you so you wont go off the deep end because you have varity.

  7. GUYS!!! I have loved reading this post, and the one that Ash did and ALL the comments! It has been very informational. I need to get back into the ETL, we have barely even been eating over in these parts! ha ha! I still haven't finished the book. I read the first half and up to the diet part, and then started the diet and then, well, stopped :p I'll get back into the book, and recipes! Soon!

  8. Corey and I had these last night as a little treat. We give them 2 thumbs up! We made them with coconut milk instead of oil, and for the chips I think it was great, but I think I'd like to try the oil in the cookies... just to see what the alternative taste would be. We really liked it though! It was nice to have something to snack on while watching a movie besides chopped veggies.

    Em... I am anxiously awaiting that cheesecake recipe!

  10. Do you use all the chips that it makes? We only used about half and saved the rest in the freezer. You're right- making the chips is fun!
