Granola Bars

I have been making all of our snacks and doing all of our baking for the week on Mondays for the past month or so, and I have loved it!

It's so nice to get it all done at once, and it actually ends up making less mess in the long run, because I can reuse measuring cups and pans for certain things.  Once I clean things up on Tuesday morning, we are ready to play for the week!  I will admit though, this week I didn't do it and I wish I had.  Storebought snacks are so expensive if you are going to buy snacks that are good for you.

I bought this ebook and it has some good recipes in it and has been a helpful resource.

This granola bar recipe is in there and we have loved them.

I made them with a little cocoa powder and peanut butter.

  1. I love the idea of having a dedicated time to get the snacking done! I would love to try these... and I know you have posted muffins... what else do you make? Snacks are hard fo rus!

  2. I made these last night! Yay for me! We did 1/2 PB and 1/2 coconut oil instead of butter, and it worked great! For ad-in's I did chocolate chips (no I don't feel guilty) and walnuts. Yumm!

    I finally went grocery shopping for the first time since Truman was born. We fell off the wagon a bit- but we are back on! Full steam ahead! It felt SO good to cook my family a healthy delicious meal last night and to make these. I intended to make ALL of our snacks for the week last night but the little man got fussy. Soooo... I will finish this morning. I am making snickerdoodle muffins, and breakfast cookies.

    Does anyone have a yummy, healthy, snack mix? I don't have any good salty type snacks. It seems like I have lots of quick bready/sweet stuff... but nothing that would satisfy the other type of craving.

    Or have any of you tried Kale chips? Sounds intriguing, but I would be more likely to try it if one of you have had success.

    Yay for healthy eating again! Even Corey said that he missed it and he was so glad that we were back in the game!

    I was going to make some Kale chips this weekend, but I haven't made them before so I have no feedback on that one. I also found a recipe for zucchini chips that I am going to try out since we will be getting our first zucchini from our garden in the next week.

    I usually do quick bready/sweet stuff as well, but I am trying to branch out. I threw together some trail mix this week with nuts and dried fruit. Also, I have had these apple sandwiches on my list of to-make for quite some time now and I just haven't, but they look like a really good snack (especially since Jocelyn just sucks the peanut butter out of the middle when I give her PB and celery). Apples and that faux caramel sauce that I posted a little while ago make a pretty decent snack as well. Smoothies are a good snack, too, but usually we do smoothies for breakfast, so lately, I have just been making smoothies and freezing popsicles out of it.

    I would love any ideas as well. I just get in a groove and we eat the same thing over and over again until we can't stand it anymore!

  5. I just made these granola bars again and omitted the baking powder and didn't bake them and I like them a lot better. I don't love cakey type granola bars. These are more of a chewy bar.
