Vegan Banana Bread

I got this recipe from The Fat Free Vegan Recipes, and we really like it at our house. She has a cool section on her site that tells you what you can use to subsitute for eggs in recipes. I think I am going to try some more substitutions soon.

(I just barely tried to find the exact recipe that I got off the website, and I can't find it, she has some other bread recipes there too that sound delicious, but this one we know and love, so I will post this one).

Vegan Banana Bread
3 bananas
2 T. lemon juice
4 oz. applesauce (if I don't have this, I just use an extra 1/2 c. of squashed bananas)
1/2 C. dark sugar
2 C. whole wheat flour
3/4 t. baking powder
3/4 t. baking soda
1/2 t. salt

Mix wet ingredients and in seperate bowl mix dry ingredients. Add dry ingrdients to the wet and mix well.

Bake 350* for 50 minutes.
Let cool completely.

Makes one loaf.

  1. Thanks for whoever helped me with the labels. I am going to have to get used to that. :D

  2. I totally forgot about this recipe! Thank you Whit! I even have bananas to make it! Yay!

  3. LOVE IT! LOVE IT! LOVE IT! and so does my three year old. As soon as it came out of the oven he ate three large pieces of of. The whole truth is, I also at just as much as he did. Seriously I love it!

  4. I made this for about my 10th time the other day and this time I added 1 tsp of ginger along with 1 tsp vanilla, 1 tbsp of cinnamon and for flair I topped it with a little brown sugar before baking. So yummy!!!! I have passed this recipe on to others. My sister-in-law who only eats organic and very particular with food asked me for this recipe. I taught her daughter how to make it last week and she told her mom it was better than the recipe their family usually uses.

You should feel good Whitney. This recipe is now sweeping the homes of many Americans.

  5. I am making this for breakfast and thinking of all of you!
