Snobby Joes

Ingredients
1 cup uncooked lentils
4 cups water
or one can of beans

1 tablespoon olive oil
1 medium yellow onion, diced small
1 green pepper, diced small
2 cloves garlic, minced
3 Tablespoons chili powder
2 teaspoons oregano
1 teaspoon salt
8 oz can tomato sauce
1/4 cup tomato paste
3 tablespoons maple syrup
1 tablespoon yellow mustard (wet mustard)

4 to 6 kaiser rolls or sesame buns or any type of bread



Directions
Put the lentils in a small sauce pot and pour in 4 cups water. Cover and bring to a boil. Once boiling, lower heat and simmer for about 20 minutes, until lentils are soft. Drain and set aside.

About 10 minutes before the lentils are done boiling, preheat a medium soup pot over medium heat. Saute the onion and pepper in the oil for about 7 minutes, until softened. Add the garlic and saute a minute more.

Add the cooked lentils, the chili powder, oregano and salt and mix. Add the tomato sauce and tomato paste. Cook for about 10 minutes. Add the maple syrup and mustard and heat through.

Turn the heat off and let sit for about 10 minutes, so that the flavors can meld, or go ahead and eat immediately if you can't wait. I like to serve these open faced, with a scoop of snobby joe on each slice of the bun.

  1. Can't wait to try this. I tried the "Sloppy Lentils" from fat-free vegan kitchen last week. They were good, but the sauce wasn't my fave. It was missing a little pizzaz. This one looks like it might have it!

  2. Hoorah! I must tell you-- even though I feel really lame for admitting it-- that Sloppy Joes are one of the only meat cravings that I still have in my vegetarian lifestyle. I LOVED me some sloppy joes. I can not WAIT to try this. Lentil Tacos are a family favorite around here. Corey told me this week that he honestly prefers them to beef. It made me whole day! Yay for Lentils!

  3. Em, we had this for dinner tonight and we give it a solid two thumbs up! I really, really liked it :) The boys loved it too which is always great. We had ours with pickles and BBQ Sauce just like we used to have normal sloppy joes. We sang "Snobby Joes, Snobby, Snobby Joes..." (SNL reference), and just generally had a wonderful dinner! Goes great with Oven Fries too. Thanks again Emily for bringing the Joes back to my life!

Alright, I must say, I saw this recipe on here, Cal is not a huge fan of 'regular' sloppy joes, and when I told him this idea, he said that it sounded awesome since we are such huge lentil fans at our house...but I did it the easy way this time and next time I am following the recipe. This time I just cooked the lentils and put them in bbq sauce, which was more like a bbq lentil sandwich, but we are fans and we can't wait to try it the 'real' way with you recipe! Also, the next day the left over lentils are so good on a salad, I know I already said that, but it is a very tasty lunch.
