Cauliflower Soup

I got this "recipe" from my student who has been doing this Healthy eating switch with me and I thought it was fantastic and super easy.  Thanks, Ellie!

She cooked 1/2 onion, 2 celery stalks, 1 carrot, 1 head cauliflower and 8 cups veggie broth... Cook it in a pot and then blend it! She put some mrs. Dash in it too!  I added potatoes and it was great!  I also did a few green onions instead of half an onion.  I used an immersion blender so I didn't have to transfer it from the pot.

  1. Oh yeah...we had this for dinner tonight and it helped us eat 16 different fruits and veggies today...16! And most of them raw and no meat or dairy all day. Feeling good!

  2. I made this tonight with just what we had in the house: broccoli, carrots, cauliflower and potatoes and the result was a green soup. I was worried that Jocelyn wouldn't eat it so I called it "Shrek soup" and voila! she ate the whole thing. I see this as being helpful with green smoothies or green anythings and since we all do a lot of green I thought I'd share.
