Three-Bean Chowder

Another recipe from 101 More Things to do With a Slow Cooker.  I use whatever beans I have in the house, but the refried beans makes the soup a little thicker and less "watery".  It's a good way to get more beans into your diet.

1 can (16 oz.) kidney beans
1 can (16 oz.) fat-free refried beans
1 can (15 oz.) black beans
1 can (14 oz.) vegetable broth
1 can (14.5 oz) diced stewed tomatoes, with liquid
1 medium onion, chopped (or 1/2 cup dried minced onion can be substituted)
3/4 cup chunky salsa
1 tsp. minced garlic
2 tsp. chili powder
1/4 tsp. cumin

Combine all ingredients in greased slow cooker.  Cover and cook on low heat 6-8 hours.

It was a bit rocky here for a while, I lost my umph and we were back into the 'same old, same old', and I was hating it. We are now back on track, and have been for a couple weeks (hooray!), and I have started learning new things and reminding my brain of all the 'old' awesome things that I know and love.   3. Yay for crockpot dishes! I am always on the lookout for them because I work from 1-5, and while my sweet husband is willing to either A) make dinner himself while I am at work or B) wait till I get home and starve until I get one prepared... I prefer for him and the boys not to have to do either! The crock pot is a great solution! I am meal planning tonight and will include this one. Thanks Shay!

    And Ashlee, I drained them first but it probably would be fine without it too if you prefer.

  6. Had this for dinner tonight! Great reviews from all present. We had ours chili style and topped it off with fresh tomato, green onion, and tortilla chips... plus also pickled jalepenos which I apparently love now. Is it a pregnancy thing? Maybe the vinegar? I somewhat remember learning pregnant ladies sometimes crave vinegar. Anywho it was great! And to my ever-loving credit I didn't top it with sour cream. Oh Heaven Help me, giving up sour cream at home is going to be hard! But I am determined!
